CARE’s on Tour comes back ‘home’. Today the second stage of the event kicks off.

After the stop in Venice, from today until Sunday 5 March CARE’s on Tour reaches Bruneck in South Tyrol, to honor its co-founder Norbert Niederkofler. More than 200 guests, 44-hands menus and unprecedented talks with the exclusive participation of NEOM will aim to revolutionise the future of sustainable world gastronomy, with a focus on resources and territory.

Bruneck, 3 March 2023 – After the success in Venice, the journey of CARE’s on Tour – the international sustainability event conceived by Norbert Niederkofler and Paolo Ferretti – goes on and reaches Bruneck and Kronplatz for the whole weekend, until March 5th. It is right among the snowy peaks where the yearlong headquarter of the project and ‘home’ of Niederkofler’s ethical ‘Cook the Mountain‘ philosophy is located: AlpiNN – Food Space & Restaurant.

How to reduce waste and protect such a precious territory? How to rely on the circular economy to encourage reuse?

These are the questions that will be answered by more than 28 star chefs, sustainability professionals and partners, during an event dedicated to its co-founder Niederkofler and his legacy in sustainable gastronomy. One of the most awaited activity on the program is tomorrow’s Norbert’s all-star team (Saturday, 4 March) at AlpiNN: an unprecedented 44- handed dinner in which for the first time the ‘Maestro’ will cook together with 22 young, established chefs who joined him in the kitchen at the St. Hubertus – Hotel Rosa Alpina An Aman Partner Hotel, over the years. Hubertus – Hotel Rosa Alpina, helping to spread his philosophy around the world: Mattia Agazzi, Bernhard Aichner, Eugenio Boer, Simone Cantafio, Fabio Curreli, Thomas Gantioler, Ariel Hagen, Nicola Laera, Michele Lazzarini, Matteo Metullio, Dario Pandolfo, Mattia Pecis, Oliver Piras, Tamara Rigo, Diego Rossi, Nino Rossi, Giacomo Sacchetto, Alex Sallustio, Mauro Siega, Phillip Sigwart, Alberto Toè and Andrea Tortora. Sold out for weeks, the dinner will be attended by 280 guests.

It will be in the ‘home of Cook the Mountain’ where CARE’s on Tour will take shape in the early afternoon today. The event will open with the Talk ‘A Taste of Change – Looking into the future of food‘, featuring NEOM, the innovation hub in Saudi Arabia, to explore the future of sustainable gastronomy. Speakers will include: Dr. Juan Carlos Motamayor, Executive Director of Food at NEOM, Niederkofler and Professor Ulrike Tappeiner, President of the Free University of Bolzano. The evening will continue with a dedicated dinner and an exceptional menu prepared by chefs Enrico Bartolini, Nick Bril, Norbert Niederkofler, Mauro Siega, Andrea Tortora and Nihal Felemban as Guest Chef of NEOM.

In Saturday’s talk at the Raiffeisein Forum in Brunico, we will once again find the theme of future linked, in this case, to theterritory. Under the title ‘Territory and Future’, it will engage Riccardo Felicetti, CEO of Pastificio Felicetti; Fabrizio Longo, Brand Director of Audi Italy; Hannes Tauber, Marketing Manager of VOG; Wolfgang Töchterle, Marketing Director of IDM; and Nicolò Zambello, CEO and co-founder of Chef in Camicia and Acadèmia.tv.

Another focus will be a total immersion in the territory with visits to the Lumen Museum at Plan de Corones, to the Bruneck hydroelectric power station together with Alperia, to discover the technical aspects of turning water into energy, and to the Genussbunker in San Lorenzo di Sebato, where master cheesemaker Hubert Stockner will reveal the background aspects of traditional cheesemaking inside what was once a bunker during wartime. After all, in order to innovate while respecting the environment, it is necessary to start from the knowledge of the place where one has its own roots.

Bruneck’s stop could not do without the winter sport par excellence. Skiing will be an absolute protagonist, starting with the Skiing on top initiative, during which it will be possible to experience a unique adventure skiing on the peaks of Plan di Corones together with champions Manfred Mölgg and Kristian Ghedina. Also, there will be the opportunity to immerse oneself in the snowy landscape and be enchanted by nature during the Trekking activity, which will include a light lunch with local products at Almdorf Haidenberg, in San Lorenzo di Sebato. Among the gastronomic stops of this edition of CARE’s on Tour will also be the b.local restaurant in Brunico and Lerchner’s in Runggen in San Lorenzo di Sebato, promoters of a local cuisine that respects the territory.

Last but not least, on Saturday evening the winner of the Young Ethical Chef Award promoted by Monograno Felicetti and supported by Acadèmia.tv will be revealed for his commitment to sustainability.

Besides sustainable cuisine, inspiring talks and activities in the field, there will be plenty of entertainment, including a DJ set with chef Nick Bril and Midnight Spaghetti with Monograno Felicetti.
