Cuisine and sustainability: off to Torre & CARE’s 4 Hands Dinner Under 30

Starting from May, the Fondazione Prada’s Torre Restaurant in Milan will once again be the protagonist of sustainable gastronomy with Torre & CARE’s 4 Hands Dinner Under 30.
For four unmissable events, young ethical chefs will join Torre’s Resident Chef Lorenzo Lunghi to create several 4-Hands Dinners. Once again this year, the main ingredients of each dish will be respect for nature and sharing.

The project: a new format, the same values

The project was born from the revival of CARE’s Chef Under 30, in which every young national or international chef proposed his or her own sustainable menu for a fortnight. After three editions, the intention was to reinforce the core values by changing the format: today the chefs become two and each event takes place over three evenings.
Despite the new format, the objective remains the same: to create a space for meeting and reflection on sustainability, offering different gastronomic perspectives.

19, 20 and 21 May: the first event of Torre & CARE’s 4 Hands Dinner Under 30

The first guest chef will be Matteo Taccini, Executive chef of the ConTanima Restaurant at the Parkhotel Laurin in Bolzano, who together with Lunghi will propose his own idea of simple, fresh and seasonal cuisine. During the first event, on 19, 20 and 21 May, Matteo will bring a ‘live’ cuisine to Milan, featuring sprouted and fermented ingredients.
Lunghi’s reinterpretation of regional Italian cuisine, with his extensive experience and Tuscan roots, will therefore meet Taccini’s enhancement of ‘poor’ raw materials. Together they will create an enveloping, multi-sensory culinary experience in harmony with nature.
