It is precisely from this common ethical vision that the partnership between the three-Michelin-starred chef, winner of the green star for sustainability, and the company, partner of the international and sustainable event CARE’s – The ethical Chef Days of which Niederkofler is co-creator — was born.
Besides their South Tyrolean roots, the two share the goal of protecting the planet and ensuring a brighter future for this and the upcoming generations.

Cook the Mountain: not just a culinary philosophy

As founder of the Cook the Mountain philosophy, Norbert Niederkofler has a 360° sustainable approach which starts in the kitchen and becomes a true lifestyle. Among his principles are the use of local and seasonal ingredients, the reduction and reuse of waste and a direct relationship with local producers. 
Awarded and appreciated all over the world for his conscious and sustainable choices, the chef is co-owner of AlpiNN — Food Space & Restaurant. A unique location at 2275 meters height, surrounded by the natural beauty of Plan de Corones and “home” of Cook the Mountain.

Sustainable energy “made in South Tyrol”

Alperia is the first hydropower producer in South Tyrol and the third largest in Italy with almost 9,000 km of electricity grid, more than 340,000 customers and 1,000 employees. In 2020 alone, it produced 5.1 TWh of energy from renewable sources, which is the equivalent of the annual energy consumption of about 1,889,000 households.
For the production of zero-emission electricity, the company uses the reservoirs of the region and invests in the development of new technologies for the energy transition. Last December, during his visit at the Brunico-Valdaora hydropower plant, Niederkofler himself was able to see the ethical and innovative approach of the partner, fundamental for a greener future.

With this in mind the two will work side by side, taking sustainability towards new levels and new horizons.
